1. How do you get the best out of your BBQ?

Barbequing does not lend itself to subtle cuisine. Good barbecuing is about intense flavours and intense seasoning. Food that has a marinade takes on a wonderful

flavour, our top tip is to marinade your food before you cook to ensure it is well tenderised. One of our secrets is to use un-sweetened apple juice. Spray it onto meat and it will help to keep the meat moist and also create a wonderful caramelisation.

2. Where should you site your barbecue?

Open space is ideal, allowing the smoke to drift away.

3. Which meats are best for grilling?

Most meats are suitable to cook on the BBQ and cooking over coals is known to bring out the flavour, but the most important thing to remember is quality – buy the best quality meats and cuts to ensure the best results. Monkfish is one of the few fish that barbeques really well - it is just meaty enough to hold together well.

4. What are the best spices and marinades?

In your rubs use a good quality product from companies such as British Pepper and Spice such as cracked black pepper, celery salt along with mix of lemon juice, pineapple juice, paprika, garlic salt & flavour essence’s.

5. Should you start cooking meats indoors before transferring them to the barbecue?

No, cook all your meats on the BBQ!
